Recommendation, an adventure without Overwhelming power
Hello, I’ve been having a particular anime craving and no matter how I search no luck is had. Part of the problem is that I’ve already seen, and enjoyed, the most common offerings that fit the bill.
I’m looking for an adventure story, ideally fantasy, possibly with some drama. But absolutely without the overpowered MC making the entire story a forgone conclusion.
Everything I’ve found lately has only been a question of just what flavor of impossibly powerful they are and I really just don’t enjoy that no matter how good the rest of the story is. Strong is fine, but if they can’t suffer any level of defeat or setback then why bother having a fight.
Some I’ve seen and enjoyed that were similar.
Grimgar(gold star and regularly rewatched)
Full metal alchemist (both)
My Hero Academia
RWBY
Thank you in advance for any suggestions.

I don't watch that many battle-shonens so I don't have that many examples, but here are a few that might be close to what you are suggesting.
Vinland Saga: this one is not fantasy, but that's actually a good point if you don't want characters that feel over-powered. The main character ends up being super skilled as a warrior, on a heroic, quite unrealistic level, but he is still human, so it is very clear he is not unbeatable.
Then, there's a few fighting oriented magical girl animes you may be interested in watching if you want the feeling that the main characters are not unbeatable.
Madoka Magica: while the actual protagonist, at the end of the original series, becomes ridiclously strong, for most of the actual episodes, she doesn't have powers, and it is her friends who fight and, while very strong, they are certainly not unbeatable.
Magical Girl Lyrical Nanoha: in the first two seasons, the protagonist has A LOT of potential and is super powerful, but certainly not the most powerful. At the start of the second season, she is actually beaten and has to be rescued by her friends. Later on she becomes truly incredibly powerful, but she is not the focus of the fights anymore, rather she trains the new generation and fights when truly needed.
You have to go outside your comfort zone in order to find weakling protagonists.
"Dungeon Meshi" as already mentioned twice in this thread.
"Ascendance of a Bookworm" (btw, this is fantasy, but she hardly goes on adventures so far)
"Made in Abyss" is a deathwish, though her bodyguard is pretty strong.
"Spice and Wolf", though it is not combat focused.
"Shadow House" has the herors solving puzzles in order to escape a prison of sorts.
"The Faraway Paladin" is a stretch since he is OP, but you might like the drama. I'll let you make the call.
"Log Horizon" places an emphasis on social mechanic exploits and a large guild working together.
"Let this Grieving Soul Retire" technically has a piss weak loser protagonist. He's effectively unchallenged though (comedy).
If you want to avoid OP characters, you might have to abandon the "fantasy" genre at some point.
