I loved Death Note, Cowboy Bebop and Hunter x Hunter, what should I watch (anime noob)?

I watch a lot of TV shows but have never really given the time to anime but these three series are now amongst my favourite TV shows of all time.

Really appreciate any recommendations for what to watch next. I’m a little unsure if I’d like some of the more magical and fantasy ones as that’s not really my jam. Something dark, mature and gritty is what I’m after.

it doesn't follow the manga story, i think that's what people don't like about it. but when it was airing people loved it. but i think ever since fullmetal alchemist brotherhood came out that follows the manga story people, especially newer viewers and anime fans, have shit on the 2003 anime just 'because'. i prefer brotherhood over the 2003 anime, but i do think it's still good and worth a watch, even before watching brotherhood

but again brotherhood is my #1 anime of all time.

Chainsaw Man fits perfectly here. You want something dark and gritty right? It has just that. Season 1 and a recently released movie, the movie is absolute cinema, best movie I've ever seen, I'll recommend you watch Chainsaw Man.

Re:zero. It’s a dark fantasy

Baccano. Not as dark in tone as the others but Tells the story in a very unique puzzled way and it’s a full story in 1 season.

It's pretty damn good. The humunculi are more fleshed out and the ending struggle is imo more grounded in relationships that Brotherhood, and I love my relationships.

I almost watched the same as you when starting out. I still can't figure out how I managed to finish Hunter x Hunter. Show was good but so many episodes. I notice a lot of anime have these desease they wanna drag the show out.

I often stop watching so called good shows that seem fun because I just can't get myself put through a another filler.

Erased is just wonderfull in that optic. Each episode builds up and no dragged out drama or side character story arc...

Steins;gate might be my favorite anime I watched after my initial discovery of anime.

Aot also very good but the ending is weird.
