Violet Evergarden is not a sad anime series. Yes, there is one episode (Episode 10) that deserves its place on any list of saddest anime, but the series in general is about a war orphan trying to recover from severe PTSD. It's more hopeful than sad.
I'll continue to die on a hill for Kino's Journey (Kino no Tabi), which also has one episode that hits really hard: in either the 2003 or the 2017 series (both are very similar; watch either), the episode titled "A Kind Country - Tomorrow Never Comes." It's standalone (like much of the rest of the series). You'll pick up what you need to know from the episode. Much like Violet Evergreen episode 10, it will get you by surprise.
(Side note: I wish we could just make one post to list the saddest anime and then point everybody to it instead of having several people every week keep asking for the same thing.)

I can vouch for Grave Of The Fireflies. I can't bring myself to rewatch it, but I always recommend it. Same can be said about To Your Eternity, I got past the first few episodes and never picked it up again because I tend to get really depressed from watching sad tearjerking shows or movies 🙃

I think I block out there really sad ones for my mental health. Are you trying to punish yourself or others? Cowboy Bebop still sticks with me, but that might because of the music. Cashern Sins. Trigun— wasn’t expecting the dramatic shift.

Sweetness And Lighting can be pretty sad but it is very uplifting so it isn’t just a train of endless depression.
It’s a cooking show at heart, a father and his daughter are getting by eating microwave and basic meals after the passing of the mother.
It’s a great little 12 ish episode show

As an important heads up, **for OP** and anyone else who might be interested in watching Higurashi When They Cry (Higurashi no Naku Koro Ni), make sure you start with either: the [2006 anime](https://myanimelist.net/anime/934/Higurashi_no_Naku_Koro_ni) (and it's [second half Kai](https://myanimelist.net/anime/1889/Higurashi_no_Naku_Koro_ni_Kai)), the original visual novel, or the manga adaptation.
The 2020 anime Higurashi When They Cry: New (Higurashi no Naku Koro Ni: Gou), is a sequel to the original story, not a remake. **Don't accidentally start with Gou**, as it's full of spoilers.
