I'm looking for different recommendations.
Let me explain. I'm looking for anime that are really good but not very well-known. I'd prefer they're not fighting anime; I'm a bit tired of that now. Maybe Link Click would be a good reference (even though it's Chinese). The genre doesn't matter too much, just that it doesn't have too many fights or the basic one where the protagonist is clumsy at the beginning and then becomes amazing.

A bunch of different genres here, most are not heavy on the fighting.
\- Haibane Renmei -- Supernatural, Slice-of-life, drama. No fighting. Not terribly long. Very good. It used to be well-known but in recent years has fallen off as the newer generations avoid the slower things.
\- Barakamon -- slice-of-life comedy about an artist moving to a rural island. Not particularly well-known or popular.
\- Mushishi -- Supernatural/Mystery/Thriller/Anthology (sorta). An expert on "mushi" (spirits) travels around and helps people and/or spirits. It's fairly well-known, or at least used to be, but still passed over occasionally. No fighting, though occasionally light conflict.
\- Ergo Proxy -- There is fighting, but I wouldn't describe this as a fighting anime. It's a scifi/cyberpunk anime with lots of plot centered around the meaning of existence and self. Another you'll see mentioned here and there, but many people don't end up watching due to its darker tone and deeper themes.
Drama : March comes in like a lion
Supernatural : Sagrada Rest (people have power, but they aren't for fighting) (COMPLETED)
1. Hyouka: its a slice of life, mystery anime, my all time fav
2. ACCA 13: Slice of life, political drama, mystery, a must watch, i love the art style and the narrative
3. ORB: On the movement of earth: Historical drama mystery, good storytelling and deep concept
4. Shinsekai yori: Psychological mystery drama, kinda dark and gore
5. Danganronpa: The Animation: Murder psychological drama
6. Vivy: Fluorite Eye's Song: Sci-fi, very beautiful anime, great songs, wholesome anime (for most of the time)
7. March Comes in Like a Lion: 2 season, SOL
8. Kabaneri of the Iron fortress: Similar to AOT
9. Joker Game: Mystery detective drama
10. Kino’s Journey: Similar to ACCA but not political drama, SOL with adventure
11. Sonny boy: Mystery psychological superpower drama, revolve around deep concept
12. To your eternity: 3 seasons, 3rd is okay okay, first 2 season are good, its kinda like ORB, and revolve abt understanding human connection
13. Odd taxi: Mystery crime thriller, wholesome vibes, and the art is good
14. Tomodachi game: Pyschological drama
15. Eden of The East: 3 seasons, mystery anime
16. The great pretender: 2 season, not sure if its underrated but love the anime, its crime drama, comedy anime
17. 91 days: psychological revenge drama
18. ID: Invaded: mystery crime drama, kinda like inception
19. Babylon: psychological political detective anime, dark anime in the sense it revolves around justice, suicide, ethics
20. Deca-Dence: post apocalyptic anime
21. Shiki: idk how to describe this anime, its horror, abt vampire but not ur conventional portray of vampire, kinda slow in the starting but grows deeper as u watch
Some of the anime were famous when released initially but not many people talk abt now since old already, and u mention u want not too much fight, i dont know whats too much fight so i will leave that upto you haha
And not well known is also subjective, depends on how active u are in anime community, some of this anime are underrated for me bcoz i didnt heard about them and accidently found
some more anime which are not really underrated but my fav: Zatchbell, Anohana, Vinland Saga, Terror in resonance, Parasyte, Erased, Summertime rendering, Castlevania(not sure if its an anime), Code geass, The promised neverland(please dont watch s2, just assume only s1 exist), Belle
Thats all i can remember for now, Thankss
If you liked aot I would give this a watch, It is also very impactful. The light novel is well known in Japan supposedly but anime is not as talked about in the west as it should be :)
