Since a lot of new series are being produced simultaneously dubbed and in Japanese, do you watch the dubbed or still stick to subs?
For me, I've typically stuck to subs for a long time. It's what's available first, I don't like waiting, and the dubs used to be pretty inconsistent. Now I'm seeing series being released dubbed immediately and I have to admit I take the dubs when it's available.

“I don’t understand the language (Japanese)”
Pick one.
But for some series like Fate/, Dragon ball, and Bleach I like the dub more so I usually wait for those
Also, if I understand the language, I always prefer to watch things in the original language, which is why, for example, I have played The Witcher games in polish. In the case of japanese, I don't understand japanese, but I'm knowledgeable enough to hear some of the nuances like the use of keigo and honorifics, which are very hard to keep in the dub. So, unless I have a very good reason, I stick to english subs.
also made me realise how complex the language really is.
Dubbed often loses a lot in translation
I watch so many animes with sub its nice to have a breather and watched it dubbed.
With that being said, dubs are getting better. If I hear good things of the dub, I will rewatch it in dub. Or watch anime dubbed with my family.
For series like Spy x Family or The Darwin Incident, which have a European or American setting, I think a dub can help. Where a lot of the time in a Japan setting, dubs can be awkward at times. Sadly, unlike SxF, The Darwin Incident's dub doesn't look promising.
A duckling follows its "mom". First thing I saw was subbed anime. I wouldn't be surprised to hear about dubbers having the same line of reasoning.
It has to be in Japanese, with rare exceptions. e.g. "Wakfu" is originally french, and I can't find the japanese dub (I tried finding it!).
The newer (like 2014 new) VAs have had strong "acting voices" that really take me out of it, and while some newer VAs are great, and some legends still do voice work, the quality of VA direction has significantly gone down. I partly blame the simulcast era, but they should still learn, and its not like everything is simulcast anymore, especially now that Funimation is out.
I realized a few years ago that ths directors are often the problem and not the VAs themselves. I still have problem with a lot of the VAs, but more with the directors
Until the dubs can be of consistent quality again, I'll watch newer shows subbed, but my older shows will remain dubbed. There have been a few times I'll see a clip from the dub and get hopeful, then get extremely disappointed when I hear the actual dub
I do have specific exceptions that date back to when I started watching anime. I watch Konosuba and the Fate series dubbed. If a series is set in an English-speaking country rather than Japan, I tend to also prefer the dub.
While we all found some things to like in most English Ghibli dubs, when it came to anime series, we had uniform negative reactions to dubs. At this point, being a big fan of so many Japanese VAs, I have no incentive to listen to dubs. And if I stumble on one accidentally, I'm never pleased.
If it's not getting dubbed, then subbed. But I'll rewatch it and support if it gets dubbed later.
