Frieren: Beyond Journeys End is a gorgeous fantasy anime, with impeccable vibes and a simple but deep story.
Chainsaw Man is insane and ridiculous and stupid and amazing and romantic and soulful and hilarious and holy shit.
Haikyuu is the best sports thing ever made.
Blue Box is a fantastic manga with a decent anime. Perfect mix of sports and romance storytelling.
Tengoku Diamakyo is a fantastic, fucked up, sci-fi, post apocalyptic story with outstanding animation and two fantastic stories tied together with a solid mystery.
*Edited to add Food Wars, cause it's fun, delicious food, great fab service and wonderful pacing.

I'm also +1'ing the other commenters suggesting Frieren: Beyond Journey's End. It's a great fantasy anime.
