You aren't going to find a good story that's still good if you don't pay attention to it.

The way I see it is that you're carrying half the conversation with the anime you watch (or the books you read, or what have you). If you don't give your full attention, that naturally limits how much you're able to take it in. A story can only be good if you let it reach you.

I feel like this is a tough ask, especially if you watch subbed anime. I think you'd be better off rewatching stuff you've watched before. That's what I do because I like to do my nails when watching, and I can only watch dub or stuff I've seen before to avoid missing anything

Non Non Biyori - multiple seasons. It's about a small rural Japanese town, most of the young people have moved to big cities, so there's only like 5 kids in the whole town. The show is about the kids and what they do to pass the time.

I'd recommend things like "cooking in another world with my absurd skill" or anything in the isekai genre really. A lot of the ones I've seen are pretty chill and entertaining once you get past the main introductory plot points to know what's going on. After that you don't have to pay attention as much and can still enjoy even if you miss a bit.
