It's one of those anime you just watch for entertainment purposes. If you watch it without expecting anything from it, it's somewhat good. Has average animation from what I recall and the concept is somewhat funny

I probably won't watch it as I only got halfway through the first season. Honestly, I'm kinda surprised it got a season 2. It was... fine. Seemed to me like one of those obligatory "we'll give it a season of anime to help sell the LN/manga then ditch it" shows.
Cool for people who enjoyed it but it was just so "meh" to me, after the actually decent first episode or two, that I have no interest in it whatsoever. Which is unfortunate because I think the premise could be interesting if it didn't fall back on the age-old "ludicrously OP MC" trope that removes all stakes from the series

I liked the first season well enough as a sort of "what if ainz got the default isekai treatment" chill show. But then I tried reading the light novels, and they're just so badly written. I'll just stick to watching the anime as the regular easy watch trash it is.

You have to remember that a majority of LNs are just published fan fictions in terms of writing quality.
I had something similar with The New Gate where the story is good but the writing is terrible lol. Its generally why I try and stick to Manga/Anime adaptations if possible.

I imagine business folks also see what has sold decently and are just playing it safe too? They've probably thrown so much out there and have seen what has stuck, so to speak. Not to mention savings on assets that have already been created for prior seasons.

It's been way more than that for a while. It does do that too of course, but there's a lot of studios and other higher ups that just want to see stuff made and are pulling from popular manga or LN just to see a next big hit anime.

Do poor adaptations trigger people to go buy the source material? I only buy the source stuff if the adaptation is good. If the adaptation sucks, I'm not motivated to check out the source to see if it's any better.

It has changed. But not just in / for the west.
Animes are now more about creating marketable characters for merchandise than ever before. Stories exist the complement the character, not the other way around.
Just go into any Animate and see where the money is.

They aren’t, but only 1 season is greenlit for most anime projects. If season 2 is only approved after season 1’s success, it’s back on the waitlist for a few years.
