I pretty don't know much about anime series. But you could atleast try watching these and you might like them.
For OVAs: Gunsmith Cats, Cyber City Oedo 808, Bubblegum Crisis, Record of Lodoss War, Gunbuster, Area 88, Patlabor, Blue Submarine No. 6, Battle Angel Alita
For movies: They Were Eleven, Macross: Do You Remember Love?, Roujin Z, Memories, Project A-ko
For series: Nadia: The Secret Of Blue Water, His And Her Circumstances, Dirty Pair, Slayers, Yuu Yuu Hakusho, El-Hazard, Fushigi Yuugi
Rose of Versailles (1979) is a political drama about court intrigue in pre-revolutionary France with important romance subplots.
Kimagure Orange Road (1987) is one of the great classic love triangle romcoms and my 2nd favorite anime of all time. Madoka Ayukawa is one of the first tsundere love interests in anime and was my first anime crush back when I was a teenager. The anime series itself has a weak ending, but the two movies help wrap up the story quite nicely. (the first movie is one of the most realistic teenager break ups I've ever seen in anime)
Fushigi Yuugi (1995) is a shojo isekai with strong romance and probably one of the first (if not the first) reverse harems in anime. Warning, this has a ridiculous amount of teenage girl romance drama, you really need to get into the right headspace to be able to enjoy it, otherwise it can be very cringeworthy, but still, it should be regarded as a classic on its own right.
Evangelion (1995): this one doesn't need an introduction. It's not really a hidden gem or underrated, it is one of the most famous animes ever. I am still including it just in case you haven't heard of it. It's a mecha with very convoluted and somewhat confusing story and lore.
Revolutionary Girl Utena (1997): a very bizarre anime with lots of symbolism and quite surrealist plot about coming of age. It's pretty hard to understand at first, the plot and lore are very convoluted and bizarre, but still, a classic on its own right. Oh, and the main romance is yuri.
Cowboy Bebop (1998): another one that doesn't really need an introduction, since like Evangelion, it is very much held in very high regard even today. Basically, a space-western, but a truly great one. No need to say more.
Cardcaptor Sakura (1998): my nº 1 favorite anime of all time... One of the greatest classic magical girl anime, with one of the cutest slow burn romances ever. The second movie is such an awesome ending to the series.
Ojamajo Doremi (1999): a super sweet magical girl anime with a much more relaxed and slice of life feel to it, but with such great characters. Also, while most of the time, it is quite lighthearted, from time to time it tackles very tough and serious topics (racism, divorce, terminal illness, etc.) but in a very age-appropriate way.
Love Hina (2000): a classic harem anime. Not the first harem, but definately one of those that really solidified what people think when they talk about a slightly ecchi harem. If you want a slightly more mature and serious romance with the same harem romcom feel, I recommend Ai Yori Aoshi, but for dumb, crazy comedy, Love Hina is a well-deserved classic.
Inuyasha (2000): the only batlte-shonen I am in the mood of watching now that I am 35, and also technically an isekai with a very important love triangle romance subplot.
Ai Yori Aoshi (2002): as mentioned before, this is the more mature and slightly more serious version of a slightly ecchi harem romcom compared to Love Hina. The twist is that the main couple gets together at the very start of the anime, but has to hide the relationship, thus giving rise to the harem situation. Unfortunately, the anime doesn't have a satifying ending, the 2nd season ends in a very awkward place.
Princess Tutu (2002): another truly incredible magical girl anime with a slightly darker tone (but not as dark as Madoka Magica). It is ballet themed and has a very meta narrative about the nature of storytelling.
Elfen Lied (2004): a classic with a very dark theme and lots of gore and ecchi nudity. To be honest, I need to rewatch it to give more info. But still, it is considered a classic, and rightfully so.
Magical Girl Lyrical Nanoha (2004): I call this one the "Dragon Ball Z of Magical Girls", it is probably the first magical girl anime that focused so heavily on fights and spectacular action. It also has remarkable world-building.
School Days (2007): I am including this one not because I think it is a hidden gem, but because I think it is slightly underrated. It is a tragedy and I believe it is intentionally uncomfortable to watch, so it achieves its purpose. In my mind, the thing that holds it back is that there's not enough of an explanation of how the MC becomes such a sociopath with 0 redeeming qualities.
Clannad (2007): this one starts as a fairly typical high school harem romance with some supernatural elements to it, but by season 2 it delves deep into the struggles of a young adult couple and has some tragic moments that hit like a truck and will make you cry.
Strike Witches (2007): to me, this is THE military moe anime. Girls und Panzer is great too, but it has a sports anime plot with military moe coat of paint. While Strike Witches has a pretty standard setting for military moe anime, with a faceless alien species that invades earth, the execution of the plot is great, the characters are super colorful and I love the MCs "reluctant warrior" arc. And, of course, it's the ecchiest anime on this list, beware, the amount of unnecessary fanservice is astonishing (whether you like it or not it's up to you).
I also adore Inuyasha!
- Armored Trooper Votoms - and it's various spinoffs
