it's not the sort of thing i generally watch either...but i watched it on a whim a couple of months ago and i really loved it. it hooks you in the first episode with the setup and then it just got better and better. the recent film was really amazing as well.

Hypothetically and only hypothetically if you don't like season 1 and decide to drop it whenever, you can go straight to the movie (a little bit of chainsaw man knowledge is good enough)
However, i recommend watching season 1 and movie

Its great show, romance part is more about the MC being a hormonal teen. Chainsawman has a great artistic style, intresting characters and a lot of chatioc energy.

Yeah, the "true" romance in Season 1 imo really got the short end of the stick compared to the abundance of, dare I say, primitive one-note horny-boy scenes. And even though this is common in a lot of anime, I found it especially jarring in a show that otherwise is rather dark, gory and serious in terms of its themes. Viewed through the lens of a gory action show aimed at hormonal teens, it's doing a great job, but I think I personally was hoping for something a little more mature or at least not this in-your-face horny (I went in blind :D)

I like everything about Chainsaw Man, except for the part 2 of the manga. Although it has some good points, there are some things I don't like about it.

My personal opinion is...it was extremely hyped up before release, and I gotta say going in completely blind, I was a little disappointed by the first season. The animation is great, in fact I believe the level of detail especially when capturing the movements of the characters may sometimes even be too much. But either way, the animation is really good. Also, the opening and especially the endings slap! Among the best endings in all of anime imo.
But so far, the story and the characters haven't really gripped me all that much. It's gory and brutal and definitely shocking at times, and you get a fair bit of action, but imo we don't really spend enough time with the characters to truly feel for them. The season is very short and a lot happens in that time frame. Most characters have extremely dramatic backstories. I'm not a big fan of how the main character's personal goal turned out to be, and I feel like the show leans into the "horny teen boy" thing a little too much and too often to be really taken seriously.
I don't know anything beyond Season 1, so I don't know how the story develops, but to give you a frame of reference even though Season 1 of Attack on Titan is by far the most shounen-like and imo probably my least favorite season of the show, I still liked it significantly better than Chainsaw Man. The whole plot in CM seemed to lack direction even though we do get to know about a clearly defined incentive/end goal for our characters. Things just happen and quick!
But again, just my personal impression after a recent rewatch :).

Check out the movie. I think its a better showcase of why people are hyped than season 1 material. I can also assure you that their is a tight plot from the start but it won't be fully apparent until later.

Id say wait for more to come out. It's a cool watch so far but when it comes to story, CSM is a slow burn that turns it up to 11/10 later on. Season 1 pretty much just introduces characters and the movie while cool adds absolutely nothing to the story. It just tells us more about Denji that we already knew
