Probably a good chance you've already seen it since it was considered mainstream
Saying stuff like that when you recommend something is a bad idea because it raises people's expectations, but it really is at least a very solid anime. Whether it becomes something more for you depends on your taste.
It's no biggie, it's more common than you think. I'm sure someday there'll be some type of study pointing out how there's some spectrum of "not recommended" to "overly recommended" with a sweet spot in the middle that doesn't trigger contrarian natures of people.
Just figured it's worth pointing out that if a simple "i didn't like it but i ended up liking it after binging it" comment is what's convincing you instead of all the people's great feedback to it online, it's just the contrarian in you more than anything else.
That's a perfect opportunity to recommend *Aoi Hana* if I've ever seen one
edit: If you want something with intelligence and mystery, Death Note is one of the GOAT of anime.
Mushishi is also fascinating, a true relaxing experience.

Outside of Yuri, these all have strong or interesting female leads. Yuri is just my favorite from an interesting intersect of relationships and athletes with stunning animation. Not to generalize on gender, but your taste seems broad and this seemed as good a unifying theme as any seeing as you identified such in the title.

Another series I recommend to literally everybody is Heike Monogatari (2022). It requires some knowledge of Japanese history to understand every reference, but even without it, chefs kiss, perfect anime.
I might as well recommend [Mr. Tonegawa: Middle Management Blues](https://myanimelist.net/anime/37338/Chuukan_Kanriroku_Tonegawa), which is my favorite comedy anime, but I might not tickle you as much as it did me. It's set in corporate Japan and is a pure comedy spin-off of Gyakkyou Burai Kaiji: Ultimate Survivor.
Apothecary Diaries
Fragrant Flower Blooms with Dignity
I have a crush at work
Secrets of the Silent Witch
Anime is 12 episodes with an adult cast. There is no EN dub, OOP, if that’s what you are looking for, but I *loved* Yamashita (Cid, *Eminence in Shadow*) and Miyamoto (Haru, *Sing ‘Yesterday’ For Me*, Raeliana, *Why Raeliana Ended Up At the Duke’s Mansion*) as the mains!
Apothecary Diaries
Frieren
All are slice of life with a similar theme of finding acceptance, friendship and love amongst peers.
Other such anime are:
Non Non Biyori
Yama no Susume (Encouragement of Climb)
Aria The Animation and sequels (for me, this is the peak of Slice of Life genre in anime)
Tamayura
Flying Witch
Gochuumon wa Usagi desu ka? (Is the Order a Rabbit?)
Romance:
Rascal Does Not Dream of Bunny Girl Senpai
Toradora
Clannad + Clannad After Story
Kanon 2006
Air (TV series, not movie)
Dark/Violent stuff:
Fate/stay night Unlimited Blade Works 2014
Fate/Zero
Fate/stay night Heaven's Feel (movie trilogy)
Monogatari Series
Mirai Nikki (The Future Diary)
Steins;Gate
Ouran High School Host Club. A girl breaks an expensive object and has to pretend to be a host in order to pay off her debt. Funny even if you don't know anime tropes but on rewatching it over the years it has only become funnier.
I also watched Mushishi around then, which is about a wandering ... exorcist, is the best way to describe it, with lovely watercolor-style art. It's like a fairy tale collection centered on one character.
My personal favorite anime is called Oh! Edo Rocket. It's a comedy about a space alien who comes to Earth during the Edo period in her hunt to arrest another alien who has committed a psychological crime. It's by the same creator as Kill la Kill, which I also love; try watching the first 60 seconds of Kill la Kill and that will be enough for you to tell if you like it.
Finally, Space Dandy, which is about "a dandy guy, in space. He combs the galaxy like his pompadour... These are the adventures of Space Dandy and his space crew, in space." It's from the guy who did Cowboy Bebop, but I prefer Space Dandy. Killer music, great diverse art styles, solid storytelling. It's kind of like 60s Star Trek if it was set in the 50s... maybe the 3050s. It takes a little to find its feet; I usually recommend starting with episode 4 ("Sometimes You Can't Live With Dying, Baby") because it's a great one, self-contained, and again if you don't like it you won't like the rest of the series.
There are so many sad anime. I'm not a fan. These are all somewhere between interesting and funny.

A Sign of Affection
Chihayafuru is completely legendary but it is also definitely a bit dated—not the easiest show to get into. At its core are high school club tournaments and the ups, downs, and overall growth the characters face. Few anime experiences are more rewarding. Granted, I think one of its strongest elements is how it handles the sports anime tournament wins and losses dynamic in a way that is less predictable and more rewarding than other sports anime, so I think it's especially good for those who have seen many sports anime. Note that Food Wars counts as a sports anime.
Juuni Kokuki (12 Kingdoms) is NOT for everyone... At its core is political world building and a personal journey. The pacing is more deliberate and storytelling decidedly grounded for a fantasy show with characters that aren't exactly adrenaline pumping levels of epicness. Rather, the characters grow slowly. Happens to be one of my absolute favorites. Note, it hits a very satisfying endpoint before the last episode, then adapts a bit more of the books for 5 extra episodes, best to watch assuming the real end is episode 39 and the rest is extra.
Fruits Basket is hard to pin down. At its core is romance, family drama, and magical realism. The show has more melodrama than the above (melodrama done well tho) and has some frustrating moments of characters being stupid but is generally a wonderfully tender, occasionally gut-wrenching examination of a number of really amazing characters and how they grow through their interactions with each other. Sometimes it feels like there's nothing going on, but that final season is a masterpiece.
Violet Evergarden is just beautiful in literally every way. Writing, characters, art, music, plotlines... It's all beautiful. This show is more episodic than the above. At its core is a set of extremely touching, sometimes heartbreaking, stories.
Revolutionary Girl Utena isn't really a show I can recommend because its approach to storytelling is so balls to the walls out there and ambitious but it is truly one of the greats. At its core is metaphor and allegory and a revolution.
Now for some more straightforward shows..
"The Magical Revolution of the Reincarnated Princess and the Genius Young Lady" is ridiculous, awesome, fun, and touching.
"Ya Boy Kongming" is maybe the greatest premise for a comedy of all time, fairly well executed.
"Skip Beat" is one of the best manga of all time and the anime adaptation ends halfway through a pivotal story arc so I highly recommend you watch the show then let it propel you into the world of manga. Comedy, drama, romance.
"Golden Kamuy" is an absurd and epic adventure. Beautiful art as well.
"Haikyuu" is hype as hell. Although it does fall into the classic sports anime trope of essentially the one female character being the hot team manager.
"Puella Magi Madoka Magica" is legendary, dramatic, suspenseful, and fun when it can be. Hard to say more without spoiling anything.
"Psycho Pass" tells a few pretty epic stories in parallel, and one of them is in line with your description, but I dare not say more... Go in as blind as possible.
Typo?
Also add Sailor Moon to the list!!
Outlaw Star and Cowboy Bebop for some really nice space opera style.
Not sure where you land with fan service ( I dislike it myself but depending on the level, can look past it) but a great isekai type anime is That Time I Got Reincarnated as a Slime.
Philosophical leaning anime I like are Death Parade, Death Note, and Psycho Pass.
2. Sign of Affection - This one is a really unexpected romance anime, it got me very hard because it brings something new to the table
**Frieren**, **Violet Evergarden**, **Eighty-Six**, and **Spice and Wolf** would be my top recommendations for that, all-time favorites of mine.
Just after those would probably be **Rascal Does Not Dream** and **Spy X Family**.
