They handwave it with special training rounds that can't penetrate the tank armor. The only time someone's in real danger iirc is when the tank falls in a river with the hatch open. And maybe when they drive a Maus (stupidly huge WWII German tank) on top of an actually small tank.

If you're talking about what cuts off casts for broken bones, the saw actually doesn't retract, but rather it doesn't rotate enough to tear up stretching skin, but just enough to cut rigid casts.
IIRC there's a small electric charge in the sawblade. If it touches anything that's grounded and meaty (like the sausage being held by somebody in the video or a woodworker's finger during normal operation) even slightly, the meat absorbs some of the charge, which triggers a brake block that stops the sawblade within just a few miliseconds, and the momentum of the spinning blade being stopped instantly is what carries it downwards. This of course completely breaks the sawblade, and you might get a small scratch where your skin came into contact with the blade, but it's better than losing an appendage.

I don't know why people keep repeating the thing about special rounds, because they say in the show that they use regular rounds during matches. One of the most mobile tanks of the Second World War was the British Cromwell cruiser tank which could achieve a maximum speed of 64km/h due to its meteor engine.
