Ouran High School Host Club is an anime about Tamaki Suoh, a pianist so talented he can play Mozart's Sonata in D Major for Two Pianos with just one piano.
I think "classical" music as a focus in anime is rather uncommon. Best you can usually do is "band" (orchestra or close-enough to) and individual instruments (like piano) as a focus in shows. Most other music focused titles tend to feature rock or pop/idol styles.
Otherwise you're just basically limited to looking for shows that have a particular style of soundtrack that's close to what you want.
[Aria the Animation](https://anidb.net/anime/2659) is one I think you'd likely enjoy, for example. Lots of acoustic guitar and simple instrumentals, no electric / synthetic music.
[Mushishi](https://anidb.net/anime/3433) may be of some interest if you don't mind "mystical-ish" music, rather than "classical".
...and so forth.

Seconding Nodame Cantabile!!!!
If jazz is also acceptable, then also Kids on the Slope

I will take it into account, I also love jazz so I will have a look at both, thank you!

*Nodame Cantabile* is probably the best one in terms of the music and approach to it. Both male and female leads aren't exactly very pleasant, but their love for the classical music is genuine and shown well.

Ao no Orchestra

Very inferior to Nodame Cantabile and Hibike Euphonium in pretty much every respect.

Does kids on the slope count?

I'm going to pick a slightly off the wall option. Legend of the Galactic Heroes. The entire OST is classical music or inspired by it. And yes, it does have romance in it.
Here's the watch order:
My Conquest is the Sea of Stars
Overture to a New War
Main OVA series (Overture covers eps 1-2, so you can either start at 1 like normal or skip to 3, I found both options worthwhile)
There's also Gaiden prequels, which should be watched by arc in chronological order, but I'd leave that for after.

Gauche the Cellist, it's a beautiful film from Isao Takahata (Studio Ghibi co-founder) that heavily features Beethoven. Admittedly not a series but a wonderful piece with a strong focus on classical music.
