Re:zero
I haven't watched Oshi no ko, but from what I've heard to start is really interesting but it can be a bit hit or miss depending on what you like, and manga had an unsatisfying ending.
Recommendations wise
Sword of the demon hunter - 2025 anime. The first episode can be a little misleading as it's more action packed than the rest of the anime, and has a brief time skip to 2009 when the anime primarily focused on events happening in the 1800s. It's a good character focused watch.
Case study of Vanitas - 2021 or 2022 anime. Great world building and solid action.
Princess Principal - is an "older" option being a 2017 anime. It's an alternative history spy thriller about a group a female spys. It has great music and an interesting story that is told slightly out of order.
Proper older anime Melancholy of Haruhi Suzumiya - it was one of the first light novel based animes. It still holds up pretty well, minus the endless eight arc in the second season but the majority of it can be skipped.
