If you are interested at all in watching anime in subed/Japanese audio, you should really learn at least some basic japanese. Learn to read kana. Knowing even a little japanese absolutely enriches the experience.
I spoke Japanese as a kid, and decided to relearn as an adult(long story short moved away, no one to talk to, plus I was never taught to read japanese either).
And as part of this relearning experience I have been watching a ton of anime I have seen before, or when I was a little kid in japanese with japanese subtitles, not english translation, just straight up the actual jpn closed captioned track.
Being able to read even just a relative handful of kanji characters along with being able to read kana, lets you read a surprising amount of signs and read papers and notes and things, and it is actually really wild how much information you are absolutely missing out on because the subtites don't even try to convey it.
Eizouken's fansubs went bonkers and did so for a ton of the show and it looks like a work of absolute passion. But even then they cant translate every single last character in Asakusa's sketch books.
Being able to read the little notes is really cool and almost personal feeing.
If you care at all about experiencing the most authentic experience with anime, I would really recommend start learning some basic conversational Japanese, and kana system.
You will be surprised at just how much you're missing.
PS so far actually one of my favorite experiences with this has been watching spirited away in japanese with only JP subs. And after several months of studying, I have really come to appreciate the very organic and touch of life that this movie really has. Listening to the way the characters talk, especially Chihiro and Yubaba. There is vocal magic that a subtitle can never capture.
