Suggest new anime to watch with gf

I just finished watching frieren with her (been wanting to show her for a WHILE), she loved it. I'm looking for new animes to watch with her.

**context**: She has watched and loved Solo Leveling, Demon Slayer, JJK (liked it not loved this), DBZ, Death Note, Welcome to Demon School Irumakun, OPM, Saiki K and One Piece - 350ep. (some others that I'm not remembering).

**Not wants to watch**: AOT and Naruto

**I'm thinking**: Apothecary Diaries (I've watched that recently, so not so keen on rewatching so soon)

Parasyte The Maxim is one I always recommend to anyone who hasn’t already seen it, it’s one of my favorites I find myself returning to whenever I want to get back into the anime mood. 24 or 25(I forget) episodes THRILLER

BOCCHI THE ROCK! is another good one. The comedy and growth of the main character is nice especially if you ever been at a point where you’ve struggled with social anxiety. 12 episodes. SLICE OF LIFE

If you willing to give it a chance, Cautious Hero: The Hero is Overpowered but Overly Cautious is a pretty fun and fast paced show that parodies the Isekia genre and overpowered hero trope. The main heroine is very funny imo and the show has gotten me to laugh out loud multiple times. It’s very anime in the sense of being over the top and exaggerated for the sake of the medium so be aware of that. 12 episodes. COMEDY/FANTASY

Fullmetal Alchemist: Brotherhood is an absolute classic with great story telling. Thrilling fights and sad moments. Great cast of characters. 64 episodes ACTION/ADVENTURE/FANTASY

Mob Psycho 100 is a story by the same person who created the One Punch Man story. Great visuals and fights, heartfelt story telling, great humor. The main character experiences a lot of character growth so if you enjoy seeing characters learn from the past and their experiences, highly recommended. 38 episodes ACTION/FANTASY/SUPERNATURAL
