Because he wants to? Stylistic choice. There’s no “reason” to my knowledge and iirc none was ever given in the manga so it’s a non issue.

Why? it’s just a color. Why does Jujutsu high choose the uniforms they do? Why does Toei wear the outfit he does? Why does Mahito dress the way he does? Kenjaku?
I think a lot of anime fans tend to look too deeply into things when the simple answer of “just because” is the right one. I really wouldn’t stress over a character’s stylistic choices. It’s never really reflective of their powers with the exception of Gojo…iirc there is a lore reason he keeps his eyes covered. But that’s the exception not the rule.

Gojo wear the blindfold because his six eyes technique drains alot of power if he doesnt.
Also, Yuji loves wearing hoodies. We first get to know this when Gojo made sure he had a hood on his uniform. And in season 3 too he's wearing a hoodie.

So that he is quite visible basically. It's much easier to say "The White Shirt dude is cursed and could kill you" then explaining every aspect of Yuta's appearance i guess. Later on it was probably to identify him as a Special Grade Student though.

He's a direct descendent of Sugawara no Michizane, one of three vengeful cursed spirit, in JJK world and so a direct relative to Gojo it is quite obvious he'll recieve special treatment from the Gojo Clan given how the higher ups yearns for powerful sorcerers from their lineage, plus Gojo cares deeply about his student and is the one who specifically asks for these things he has done it for Yuji as well on top of that He's one of the 4 Special Grade Sorcerers, most other three have distinctive wears so they just went with him as well. And also from a symbolic perspective, dude is most humble soul in JJK world and is often portrayed for "love, care and friendly vibe around him" for his friend so that kinda checks it out.
