What anime have people switched up on the most?
Some examples include:
\-Seven Deadly Sins because of the decline in animation and people lowkey realizing that Meliodas is a weirdo
\-Promised Neverland, due to straying away from the manga (despite the manga ending itself being poorly received... seems like a lose lose either way)
\-Akame Ga Kill was praised when it 1st came out and a lot of people who weren't even anime fans watched it but as the anime deviated more and more away from the manga, opinions soured
\-Kakegurui: In 2020 you could not scroll on TikTok without seeing Yumeko Jabami, Mary Saotome, Kirari Momobami, and Midari Ikishima whether you were an anime fan or not. Somewhere a year or 2 later all that hype disappeared (probably due to the lack of a season 3) and people went from praising the show to high heavens to bullying anyone who like it. I honestly dont know where the switch up came with this one

Annnnnnnnnnd now we're where we're at currently lol...
It... it... it... it... it... it... it... it... was endless.
I remember watching several weeks thinking it had to end that episode. The ultimate troll would have been to make it last 9 episodes.
Kakegurui was one of the relatively few anime on Netflix, a streaming platform most non-anime fans would have had, when anime blew up during the lockdowns. As such, it was one of the first anime many new fans watched. It has good animation, character designs, and voice acting, so it became quite popular. Unfortunately, the story is rather weak and nonsensical, so as people who started with Kakegurui watched more shows, and other new fans got around to Kakegurui, they were able to see the flaws in the show. And the people who had started with Kakegurui but never watched more shows just stopped caring about anime in general. Therefore the general consensus on the show switched up. Also, to go along with what you said, the second season aired 6 years ago. It would be out of public consciousness no matter what.
For some reason, a subpar ending made people forget that the other 95% of the series was phenomenal.
I feel like for a long while it was seen as the weakest of the big 3 for a while. The fullbring arc was so different from the other arcs people hated it. The anime also ended on that arc without a full conclusion to the story. So Bleach was thought of as the weak link and forgotten for a long while.
But now with the new (amazing) adaption for the finale Bleach has gained a lot more reverence from loads of people. The fullbring arc doesn't seem as hated either. Plus the final arc Thousand Year Blood War which was not hated but kinda meh in the manga is being elevated by the anime imo. So the conversation surrounding Bleach has changed so much from 10 years ago.
Naruto: it was essentially the face of anime in the mid-2000s but the plot being dragged endlessly with repetitive battles, character bloat, power creep, excessive filler, alien gods and destiny retcons, one of the worst choices for a final antagonist, all of this leading to quite the unsatisfying ending caused a huge fandom burnout. Plenty of people dropped it long before it ended and only came back to see how it ended (and didn't like it).
Death Note: similar to Evangelion, it almost immediately gained global notoriety and was widely considered "the greatest/most intelligent/deepest anime of all time". A second half universally considered horrible was enough for most people to open their eyes. Still considered good but hardly perfect or the best anime ever.
