Oh, this anime I'm watching right now on HiDive called Hell Mode has a pretty unique magic system. He's a summoner, and stats depend on basically stacking summons. So actually real video game mechanics. Would recommend.

Outlaw Star has *two* magic systems. There's Tao magic used mainly by the pirates, and the Caster magic system that's gone virtually extinct except for the last remaining spells that were converted into bullets.

The Irregular at Magic High School is pretty great because it combines science with magic.

The anime called ‘Mashle’.

Basically all these answers are gonna be beaten by Witch Hat Atelier when it actually comes out.
But until then, I guess I'd probably pick From the New World.
It's not that the individual "powers" are particular unique or special. It's just telekinesis, generally. Rather, it's the wider system around the powers. Specifically:
[From the New World early episodes] >!The specific restriction of the powers are that you are not allowed to hurt other people. This is done through mental conditioning such that if you do hurt people, even by accident, you kill yourself, and is the result of the fact that offensive powers are incredibly powerful while defensive powers essentially do not exist. However, this conditioning is not absolute, various people are glitched and have no such restriction, or are unable to control their powers and inherently harm others, and naturally this makes them overwhelmingly dangerous. The result of this has all sorts of interesting effects on how society develops, as the series depicts.!<

Dorohedoro has such a weird and esoteric magic system. I really like it.
Same with Chainsaw man and them having to make pacts with devils such a cool concept.

Somehow only recent Chinese shows comes to my mind: , Lord of the mysteries first season just aired, and while it's still early in the story, the various abilities will get banana as the story progresses.
Also to be hero X spins your usual superhero powers with believers over social media. While the power system itself isn't that complex, it was a breath of fresh air for me.

Although it doesn't introduce anything specifically unique, I think frieren is always on top

Seikon no Qwaser where they bend period elements using energy from breast milk

The ToAru series has Magicians and Espers in the same world. Index focuses on the magic and Railgun/Accelerator focuses on espers but they take place around the same time of the story and you see characters from both.
There's plenty of action, but I'd recommend trying Index and if you like it to follow the watch order.

Jojos has a good power system. It’s introduced in the beginning of part 3 put the full extent of the power system is explored in later parts. You could argue if it’s the best or not but it’s definitely one of the most unique ones.

If we are talking about creative and smart executions of battle systems/mechanics, that's "World Trigger".
And no other anime bothers or is capable of approaching that level of fun.
If we want too much exposition for something that is basically "no, I win", you can watch JJK.
If it's "Nuh uh! I'm not dead! I have super regeneration and come back to life!", try and poke a guess at which show I'm referring to.
Naruto has "this one guy solos the entire world at the same, and the fight looks lame while he does it".
There's also a middle ground, but middle ground stuff is less memorable.
