Vinland Saga
Arslan Senki
Orb

Just want to note, the author of Orb, Udo, has commented that Orb is definitively NOT historical per se.
Basically, the author set out to write a story about heliocentricism and the Church's suppression of it, and learned the historical story was extremely complicated. Heliocentriism was embraced by more liberal church leaders, and rejected by others, so depending on which Pope was in charge, and which region you looked at, Heliocentricism was in turns embraced, or literally could get you burned at the stake.
For example, even while the Galileo trial was going on, the Church Calendar was based on Copernicus' calculations that presumed a heliocentric solar system, and had been using Copernicus' astronomy works in official Church calendar calculations for decades.
So Udo in some ways found the modern perception of how we think Heliocentrism won despite overwhelming opposition was kind of more interesting as a story than the more complicated historical story, so he made the whole thing fictional--that's why all the characters and nations presented are made up.
It's a thought experiment that's more based on how modern people think about history of heliocentricism developed, not the actual history of heliocentricism.

Okay, these two do have some supernatural element but are very heavy on medieval life and how it works:
Maoyuu Maou Yuusha
Spice and Wolf
I really enjoyed both, and although the supernatural element in each is necessarily part of the story, I felt that they placed more emphasis on regular (western) medieval life.

**Elusive Samurai** has some supernatural elements, but is predominantly based on history (14th century Japanese Civil War). The way the supernatural is incorporated is not like in an anime-magic kind of way, but more like fortune telling, changing the weather or the winds, that kind of thing, not throwing fireballs or energy blasts.
**Heike Monogatari** also introduced a supernatural element in the form of a fictional girl who can see visions of the future, but the structure of the story is based on a 800 year old novel, which itself is based on the real events--the fall of the Heike Family from rulers of Japan to ruin and the 11th century civil war in Japan that caused it.
