I’m german and normally watch sub, but two animes where I really like the german dub are Soul Eater and Haikyu!! To learn german I would probably recommend Haikyu!! more (and its my fav anime), but it’s hard to judge as a native speaker

The only german dub I have seen is Schwarzesmarken. Its an ok show, Good ost, action, interesting, its the type of anime that you like because of certain parts and forgiving the bad aspects. I don't know german much but I thought the voice acting was good sometimes. Uncensored version on CR.

Definitely recommend Dragon Ball and one piece (German First Intro is miles better than the original IMO).
For learning i Generally recommend to watch something you know the Plot and Dialog good enough so that you can completly concentrate on the language.
Watched haikyuu recently on German, and it has its charme, but could be a bit Harder to understand.
