I'm looking for an anime where the protagonist has to make a living by working or negotiating, but not the Isekai type where they get too much money and take advantage of bugs or rare knowledge.

Pretty much any “working people” anime by PA Works.
Hanasaku Iroha: people work in a ryokan
Shirobako: anime industry
The Aquatope of White Sand: people work in aquariums
Sakura Quest: tourism in a rural town

PA works really struck gold with that niche

IDK about making a living, but the trio in Samurai Champloo are constantly doing odd jobs to pay for food as they bum it across Japan.

**Interviews With Monster Girls**. The protagonist is a hogh-school biology teacher. Pretty straightforward and family friendly, even with a succubus romantic plot.
**Sakamoto Days**. Assassin retires and parties. Operates a combini.
**Bartender**. The protagonist's job is in the title.
**Reataurant To Another World**. I'll call this one borderline for your specs. The Master runs a restaurant he inherited from his grandfather. The restaurant shifts to another world every Saturday, and his clientele is a variety of creatures from humans, dwarves, elves, lizardmen, etc. [Spoiler side note]>!his grandmother was native to this other world!< It also has a buxom demon girl and a death dragon as waitresses.
Finally, **I Couldn't Become a Hero, So I Reluctantly Decided to Get a Job**. In a world much like modern-day Japan, they have a problem with a demon lord. Students are selected to attend a special academy to become heroes to defeat the demon lord. While our protagonist is in training, the demon lord is defeated by another hero. Now our hero has to get a real job.
