My recommendations are Chihayafuru and Bakuman. I can think of many more but to avoid clouding the pool I am just going to suggest these two that I feel fit best and explain the reasonings below.
For starters, Chihayafuru. I am not really sure why this one came to mind first reading your list, probably because I did a rewatch last year to be honest. As far as series that go into intimate detail on the subject, in this series case Competitive Karuta, Chihayafuru is one of the very best out there. Going into the series almost nobody will even know what Competitive Karuta is, but by the end you will have a full grasp on even some of the more niche rules and feel the tension behind traditional japanese poetry and the rows of cards laid on the tatami mats. Outside of the game the interpersonal relationships are also written very well and the cast of characters are all fun and interesting.
Next up Bakuman. is my ultimate favorite anime. Written by the same mangaka as Death Note, I will always put forth that Bakuman. is thier superior work, as Death Note notably has a bit less hype after the mid point in the eyes of many including myself. Bakuman. is a story about two young mangaka trying to make thier name in Shounen Jump. It is thus of course loosely based on its own creators story and experiences and features a large cast of fun characters. Outside of the great characters and tying back into the post I ask a simple question- Who better to write a story that dives deep into the intricacies of the manga world and climbing to the top than a pair of mangaka that did just that? You could go with this one simply as a fan of Death Note but I ensure you that the series holds the same kind of lasting power and magic that the other work has as well.
Steins;Gate
Psycho-Pass
Erased
Parasyte
Bakuman
91 Days
Baccano!
