Somebody please give me recs.
Don’t say demon slayer or jijustu kaisen cause I’ve seen a good amount of those two and think they’re boring (no offence).

She will beg you to marry her after watching this masterpiece
If you don't start watching anime just because you are interested in watching it, it's going to turn into a chore rather than a hobby. People also get very annoyed when you try to pretend in order to impress someone and isn't something you are genuinely interested in. So, find out what you like, watch anime you'd like, talk to her about your and her tastes in anime and then you'll have a meaningful connection. If you dislike anime, find a different connection and just talk to her about those instead.
Attack on Titan is more interesting. A few other animes that are current and popular: Frieren, Re:zero, Oshi No Ko.
EDIT, 'cause it posted before I was done : Ask her what she likes, try some of the classics (Fullmetal Alchemist : Brotherhood, the Ghibli films, DragonBall) and ask her what she'd recommend after, etc. Essentially, make it a conversation where she can share her love of anime with you, not one where you try to appear as something you're not.
I've been watching anime for like ten years, love it. someone who watches only action anime, shounen in general, or just whats trendy wouldnt impress me because i think those are lowkey lame, but thats just my taste.
so, if you are trying to impress her, learn more about what she specifically likes and dislikes, and consider that when choosing what to watch.

Much better than pretending to be into anime as much as she is.
My first recommendation is Ro-Kyu-Bu, this is a serious sports anime that deals with young people playing basketball and features a lot of wholesome coming-of-age moments and pretty intense matches at the same time, as well as depicting the struggles of being a teacher dealing with young people and their problems. My second recommendation is ImoCho or 'SaikinImouto;' this is a family drama revolving around a pair of estranged siblings and has some minor supernatural elements and mortality-related themes.
I would advise that you go into these series blind when watching them with your girlfriend since there are certain plot developments that you don't want spoiled and the quality of the writing doesn't hit as well if you know too much about the story.
Then she'll beam about her favorites and you can talk about the show as you finish the series.
And if you don't like them then find out other things she likes music, food, sports and do things around that.
Man, I've really lost my touch. I can't think up another low hanging example.
Instead, focus on finding anime that YOU might like. What kind of shows, or movies, in general do YOU enjoy? With that knowledge we might be able to make some recommendations that help you get into anime yourself. Then you could potentially bring new anime to her attention that she hadn't seen before.
Don't bullshit her, listen to her
