Trying to get back into anime, could use some recommendations!

Hello! From middle school to early high school I really enjoyed watching anime, but around my sophomore year I stopped because I was told it was "cringe." I'm looking to get back into anime now that I'm an adult! I adore all genres, the only thing I don't really like is heavy fan service. Thank you to any people who recommend me their favs! :3

I think some mature seinen will suit you. Frieren (recent, emotions), Monster (best written antagonist), Vinland Saga(self-understanding), Steins Gate with Steins Gate0 (appreciation of loved ones) will suit you.

Could you tell me more about like your favourite genres so I can get more precise.

I love so many genres I don't think I could pick a favorite but by favorite anime by far is Hunter x Hunter. I've had a lot of people poke fun at me for it but it just balances everything so perfectly for me! I keep rewatching it.

Have you watched AOT? FullMetal Alchemist brotherhood is also very good. Code Geass is one of my favourites. You could try one of these.

Any person calling anime cringe must be an alien.
If you're into strategies and a little politics, you should try Code Geass.
If you are looking for procedural drama-esque, Detective Conan could be your thing along with Dr Stone.
The ones I look forward to watching are Ghost in the Shell, Psychopass, and Berserk.

So you're asking for favorites right?

First off, someone might actually recommend "Goblin Slayer", so let me cover that by saying that it's not worth the time. It's a generic anime "humans with elf ears". But feel free to watch it for the protagonist's costume or the fun OP songs. It's a Gary Stu with a harem, and clumsy use of rape in episode 1 (a fine example of why anime has the renown for being cringe).

Second, recommendations.

You can try out "Dungeon Meshi", a western high fantasy dungeon crawler. Leverages comedy throughout, has a clear love for western fantasy D&D/videogames, has strong characterization (products of their background), and has the most creative worldbuilding around.

"Medalist" if you want to feel safe and supported by a handsome life coach. It also happens to be a sad, happy, and hot-blooded competition story. "Jyaaaanpu!"

If you like "Dungeon Meshi" and don't mind trading away all the smarter writing in exchange for a more immersive soundtrack and some kickass "rule of cool" Eldritch bosses, then "Made in Abyss" is the "dark souls" anime. It has tradeoffs, but none of these are dealbreakers. If you LOVE soundtracks, you can follow it up with a slice of life about rocks, "Ruri Rocks".
